What happens in Italy when a wild chicory turns into a precious vegetable? That vegetable ends up travelling the world and becoming one of the symbols of our country. And this is exactly what happened to radicchio, born in Veneto at the end of the XIX century in order to “perfect” the vegetables that people were growing in those lands, which were rich but lacking of water. After the EU assigned the Igp certification to it, it has become extremely popular. Its characteristic bright red colour, its crunchy consistency, its slightly bitter taste, is what makes it unique.

In this book, food journalist Manuela Soressi tells the story of the radicchio and its 5 Italian Igp varieties. To top everything off, we have Claudia Fraschini’s recipes: simple, tasty and able to make the radicchio the true main character of the plate.

Manuela Soressi

She started her career as a food journalist in a very casual way, but she soon got really passionate about the field. She was the director of a food magazine and then, as a freelancer, she started telling the “behind the scenes” of the food industry for different newspapers and magazines. Today she’s a contributor for many different national newspapers.

Claudia Fraschini

Claudia Fraschini is a lady with two great passions: cooking, a love which comes from her childhood, from the afternoons she used to spend with her grandmother, learning the secrets of ancient tastes; and one more recent, coming as a flash of inspiration, photograpy. After working for many years into catering and education area, at fifty years old, she decided to begin a new ordeal: she found an old printing press and started to build her dream. The space has been transformed into a great cusine and reflects Claudia’s idea of food and life. Launched in 2016, Cookin’Factory is a “cult” place in Turin.
